What vegetables can I add to green curry chicken recipe?
I bought this instant green curry sauce from trader joe’s but I wanted to add some vegetables with the green curry chicken I am going to make. What vegetables can I add to the dish that would make the green curry chicken tasty?

The classic things to add would be bamboo shoot, green bell pepper, and eggplant. Make sure to use the Asian/Japanese eggplant over the American one. The gigantic American eggplant tends to have a tough skin that usually doesn’t taste good in anything soupy.
Usually they sell the Japanese eggplant at Ralphs. The bamboo shoot might be harder to get. You can eat green curry without it. Cut both the bamboo shoot and green bell pepper into 1/4 inch strips and just cut the eggplant to what ever size you want. Just lightly stir fry the vegi, so you won’t need to boil it too long to get it soft. It also tastes good if you put chopped basil.
You can add sliced carrots, cubed potatoes, and asian eggplant.
Simple answer – what ever you like!!! It doesnt have to be “authentic” – if there is such a thing…curries vary region to region and cook to cook
I make my own Thai curry pastes and sometimes I make very “basic” curries, but at others I like to make a ‘one-pot’ dinner… In addition to the veggies suggested in other answers, I add mushroom, celery, green beans, Bok Choy, baby spinach, eggplant [aubergine], Zuccinni [corgettes], baby broccolli, etc etc. It really is a matter of your own personal taste [buds].
