What vegetable side should I serve with Chicken Curry and rice?
The curry recipe has coconut milk in it, and I need some suggestions for a good side vegetable to go with the chix and rice.
Any suggestions?

Try carrots or greenbeans.
Cauliflower or beans
Pea pods or baby corn in the can, or both mixed together!
the curry and rice are already heavy so why don’t you consider a side salad.
ANY steamed green vegetable would go very well, such as broccoli, peas, green beans, spinach, whatever.
Green peas (frozen, not canned). They will be great with the curry sauce. I add peas to my coconut milk curries all the time, or I’ll stir them into cooked rice and have alongside chicken.
I wouldn’t serve any vegetable WITH it.
I would open up with a Thai salad
Either a simile green salad with a Thai peanut dressing or something like this
Curry tastes best I think with a Yogurt Cucumber side dish…it cuts into the spicy flavor of the Curry adding a fresh, Crisp and cold side. It dosent sound that appealing but it does really compliment the dish. Its also very simple to make.
I wouldn’t have a side. I would add more onion to the curry to bulk it up more, or perhaps add some cauliflower to the chicken and onions.
