Is a simple vegetable curry made with yoghurt and curry paste healthy?

I also put tofu in it as I am vegetarian – it is delicious..but is it a healthy meal on it’s own (no rice) ?

Yeah it’s really healthy so long as you’re using a low fat natural yoghurt!

You should also being some sort of carbohydrate with this aswell to give you the energy that you need. If using potatoes in your curry you’re all right. If not, try some brown rice with it or perhaps wholemeal pitta breads.

I have found that curry paste can be very oily, I like to make my curry using a whole load of spices, which I dry fry first, I also use skimmed milk. I’m sure yours is quite quite delicious though! I would deffo have rice though.

Yes, it is a very healthy meal. Being vegetarian you also do not need to use low-fat yogurt, because you are not eating any saturated fats and this meal does not have any other dairy products with “hidden” fat content.

However, I am concerned your definition of “healthy” simply means low-calorie. Like the previous person, I believe you need to add some carbs for energy and being more “balanced”. Remember that the three basic building blocks should be included in every meal: protein, fat and carbohydrates. The carbs should preferably be whole grains NOT processed including white rice or bread. Yams and sweet potatoes should be included in the “vegetables”. And try additions such as lentils and chickpeas as well as tofu.
