Coconut Chicken and Lime Curry

Cooking Time 15 minutes

Ingredients (serves 4)
2 tablespoons peanut oil
650g chicken thigh fillets, trimmed, thinly sliced
1/4 cup Maesri Thai green curry paste
270ml can coconut cream
1 tablespoon fish sauce
2 teaspoons brown sugar
250g cherry tomatoes, halved
1 cup coriander leaves
1 tablespoon lime juice
steamed jasmine rice and lime wedges, to serve
Method
Heat a wok over high heat until hot. Add 1 tablespoon of oil and half the chicken. Stir-fry for 2 to 3 minutes or until golden. Remove to a plate. Repeat with remaining oil and chicken.
Add curry paste to wok. Stir-fry for 30 seconds or until aromatic. Return chicken and any juices to wok. Add coconut cream, fish sauce, brown sugar and tomatoes. Stir-fry for 2 to 3 minutes or until tomatoes just collapse. Stir through coriander and lime juice. Serve with steamed jasmine rice and lime wedges.

Try this, it’s really delicious

2 pounds boneless skinless chicken breasts, cut into 1/2-inch chunks
1 teaspoon salt and pepper, or to taste
1 1/2 tablespoons vegetable oil
2 tablespoons curry powder
1/2 onion, thinly sliced
2 cloves garlic, crushed
1 (14 ounce) can coconut milk
1 (14.5 ounce) can stewed, diced tomatoes
1 (8 ounce) can tomato sauce
3 tablespoons sugar

Season chicken pieces with salt and pepper.
Heat oil and curry powder in a large skillet over medium-high heat for two minutes. Stir in onions and garlic, and cook 1 minute more. Add chicken, tossing lightly to coat with curry oil. Reduce heat to medium, and cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear.
Pour coconut milk, tomatoes, tomato sauce, and sugar into the pan, and stir to combine. Cover and simmer, stirring occasionally, approximately 30 to 40 minutes. Serves 6

you need 1 tea spoon full powdered, corriender, turmeric, garlic & 3 teaspoon ginger paste,2 large chopped onion, oil, little salt & freshly ground black paper, & 1tea spoon of ground red chili paper. I am assuming you have 5 to 10 pounder chicken cut into small pices. on a large pot heat the oil ,put the onion & stir it for two minuts. now put ginger & garlic first then all the powdered spices, along with the salt & paper.incorporate them very good, as they sticking to the pot…….. .deglaze them by adding a can of coconut milk…..remember not the cream. cover the pot stir it occationaly, make sure it dont stick to the pot.few minutes later water will evaporate & spice will be on the oil, dump the chickens in there, stir it good, make sure they mix good. Grab that empty coconut milk can & fill it with the water & add it onto the chicken. sitr it occationaly cook it in midium heat. When the chicken is allmost put a heap tea spoon full of roasted cumin powder. fold it gently so it mix with the curry evenly. cover the pot turn off the stove.leave it for half an hour………enjoy with white basmoti rice…..
