I am making Sweet Potato Curry tonight, but how should I cook the sweet potatoes?
Peel, dice, and boil them?
Peel, dice, and bake them in the oven (roast) them?
What do you do?
Is the method for cooking potatoes the same as for cooking SP’s?

That sounds sooo good. lol I bet either way would work just fine. I have cooked SP the same as I would a yellow or red potato.
you can cook them the same, however the boiling process tends to make them mushier and to me they seem to cook a bit faster than regular potatoes.
If you’re going to use them in curry, probably that’s your best bet for that recipe, but watch how long you cook them.
For just eating ,I personally think they come out better, both texture and taste, when you roast them in the oven. I do mine without peeling them, and then remove the skins after they are done.
You can use both of those methods to cook them.
when i make curry i make the base first (fry the curry paste in oil), then add coconut milk and stock. i leave this to boil for 10-15 minutes and then start adding vegetables. the order in which i add them depends on how long the different veggies need. when i use sweet potato i peel and cube it and throw it in about 7-10 minutes before everything else would be cooked. sweet potato doesn’t need long and if you cook it longer it tends to disintegrate. hope this helps
Take four sweet potatoes, rinse them clean , fork them, and then dry them off and wrap them in ALUMINIUM paper and put them in a preheated oven for 1 1/2 at 400.
Take them out and let stand for 5 minutes. Unwrap them and gently peel the skins off. Place them in a bowl with 2 tablespoons of butter, 1/2 curry powder, more if you like curry flavor, 2 taplespoons of fresh or dry parsley , mix into a puree and voila ! That easy
