How do you make simple West Indian curry?
I want to make West Indian curried shrimp and white rice, but I just want to use the curry powder. I don’t want to buy a dozen herbs, leaves, pods, etc. Does anyone have a recipe? I have carrots and potato, and 1/2 lb medium sized shrimp.

Ingredients :
12 shrimp
4 tbsp curry powder or paste
8 tbsp coconut milk
200g onions
1 apple
1 banana
Salt, pepper, oil
Basmati rice
Recipe :
1. Brown onions in oil in a frying pan over high heat.
2. Slice shrimp and add, cook until golden.
3. Add curry and coconut milk, cook for a further 5 minutes.
4. Add 1/4 litre water and chopped fruit. Season.
5. Cover and leave to cook over a low heat for 30 minutes.
6. Cook rice until fluffy then serve.
The easiest way to do it, prepare your shrimp, wash it well in lemon juice. of a lemon.
Do you have onion and garlic, I would highly recommend that, but if not, well then you don’t. use garlic and onion powder instead. Chop up the garlic and onion heat the skillet, add a it of oil let it get hot. Only if you have fresh garlic. put it in the skillet and let it fry for a couple minutes until it turns brown, add about 3Tb. of curry powder and fry it,it will get lumpy and dry , move it around in the skillet, if you have to add a bit of water do.. no more that a spoon ful. if you have onion add these now. maybe a medium sized onion, saute until it starts to turn transparent. Add small diced raw potato and carrot at this time, simmer until tender, keep adding tiny bits of water as you need it, and more curry if you did not get enough the first time(taste test) Add the shrimp, and stir it to saute it. If you have any other spices, (garlic, ginger, onion) add them now, turn down the heat and let simmer about 15 minutes, or until the shrimp have turned a nice pink color.
serve over rice or on a roti
