Buy some hot curry paste! It comes in little jars and sometimes in foil pouches. Takes all the guesswork out, saves a ton of cooking/ simmering time, and is very inexpensive as far as seasonings go. You just add a dab to your sauce, and if youu want it spicier, add a dab more. The paste comes in a few colors, different flavors and different levels of spiciness. The sauce base can simply be coconut milk, or a tin of diced tomatos…whatever floats your boat.
Buy a flaming hot curry paste, always cook it first, because the longer you cook it the more intense the heat
Just one thing…
chilli powder….lots of chilli powder….
trust me, if you have that then you are more then prepared….
Indians never use more then a teaspoon of that stuff…so think what a table spoon would do….
Bon appetite
Ah my beautiful child! Google VINDALOO, or BEEF RENDANG, and all your questions will be answered!
To make a very hot curry look for the hottest pepper you can find in the produce section. I would recommend goat pepper or habenjero.
The curry is a mixture of spices, so if the maker of the curry powder has added a hot spice to it, it will make it hot. As when they make a curry paste, depending on the spices combined depends on how hot the curry.
You might try looking and see if your grocer sells Mantok’s pepper sauces, there are several different variety of bottled pepper sauces that would work well.
