Well my wife who is Indian uses turmeric, hot peppers, some cilantro, and whatever she has on had, maybe some garam masala.
And sauces can vary a lot, but we don’t call them sauces, but gravies.
chinese do not usa Curry curry has been used by Indian, the chips ,if you want similar and better frite in peauts or corn or sun flower oil no deep frite, ifm you use the kind of vegetetable oil used in the take away will became no good.more do no use frozen chips that you find in the supermarket but cut the fresh one no more thick than thin,i am a chips lover and i studied the best way for enjoy it, one way for enjoy more is to put the chips hot in a glass pot were bifore you have to put many garlic thin cutted and rosmary and salt put the chips there shake and enjoy
I’m like you, I love chips from the Chinese takeaway. So much nicer than the sort you get from fish and chip shops. I think it is because the oil they are fried in is also used for cooking chinese food, so it is slightly flavoured.
