how can i make a mild indian pork curry?



I have some freinds coming for dinner but one of them can’t eat anything too hot,has anyone got a recipe for a mild pork Indian curry?

(Mild) pork curry

60ml/4 tbsp ghee
1 onion, chopped
4 cloves garlic, crushed
seeds from 4 cardamom pods
1/2 cinnamon stick
4 cloves
5ml/1 sp ground ginger
2 green chilies, chopped
900g/ 1 lb boneless pork, cubed
juice of 1 lemon
5ml/1 tsp grated lemon rind
5ml/1 tsp grated orange rind
5ml/1 tsp salt
300ml/1/2 pt/1 1/4 cups water
30ml/2 tbsp chopped fresh coriander

1.Heat the ghee and fry the onion and garlic until golden. Grind the cardamom seeds, cinnamon and cloves then add to the pan with the ginger and chilies and fry for 2 minute, stirring.

2.Add the pork and fry until well browned on all sides. add the lemon juice, lemon and orange rinds, salt and water, bring to the boil then simmer gently for 1 1/2 hours until the pork is tender.

3.Serve garnished with the coriander.

I am a former chef and make a extra hot vindaloo and Gan style one, I use pork shoulder for mine, as for the heat level, the curry powder can be the way to do it, I would use a mild version, and loads of veg, onions, garlic, fresh ginger, I put beans or potato’s in mine, but you can add green peppers and other veg if you like, slow cooked is best to make the meat tender and have the sauce, go in to the meat.

I do mine in the crockpot, I also cube the meat and brown it in the oven or in a pan, add the veg, curry powder and either stock or water, set it on high when the mixture comes to the boil, lower it and let it simmer, serve with rice and a green veg, but make sure it is well cooked and tender.
