Heat 1 Tbsp. olive oil in a sauce pot and add a spoonful of minced garlic and minced ginger. Stir until fragrant. Add 1 cup basmati rice and stir to coat for a minute or two. Add 1 Tbsp. curry powder, stir to coat for a minute or two. Add 2 cups veggie stock, stir, bring to a boil, then put a lid on and reduce to simmer for 18 minutes. A couple minutes before it’s done, toss in a handful of frozen peas, chopped green onions and cilantro, (or shrimp if you would want it). It’s really delicious.

In the Cook Islands I had a great Paw Paw (Papaya) Salad. It was simply chucks of fresh papaya with mayonnaise (they swear by Best Foods), curry powder and lemon juice added to taste and chilled. It was wonderful!
