Does anyone have a recipe for curry chicken?
My great aunt married a man from the islands and she makes the best curry chicken. only thing is she lives in teaneck, nj and she comes down ever so often so i dont get to have curry chicken as much as i can. some one help.

Curry chicken recipe
INGREDIENTS:
6 skinless, boneless chicken breast halves – cut into strips
1/4 cup olive oil
2 large onions, diced
1/3 cup curry powder, or to taste
DIRECTIONS:
Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)
You’ll need:
Mild Curry powder
Onions, red pepper or chilli
Chicken (whateva parts you want)
Oil
Milk
Tomatoes
Corriander
Garlic
Seasonings such as Maggi cubes, black and white pepper
1st off prepare your chicken clean it, wash it with lime or vinegar, then season it with seasonings
Meanwhile heat up an oiled pan and place chicken in it and fry it until brown then take it out
Add your onions, garlic and peppers chopped, then when soft and brown add your tomatoes
Add some more seasoning, black and white pepper and maggi cubes around (4-5)
And leave to simmer
Bowl some water in a measuring jug add 2 table spoons of curry powder to it and stirr
Add it to the onions and tomatoes etc..
Leave to boil, then add a cup of milk, leave to boil again then
Taste for salt
add your fried chicken and chop up some fresh corriander and add it to your dish simmer for another 5-10 mins and serve with rice!
Chicken pieces, chopped onions and garlic, curry powder, grated coconut, oil, potatoes, vinegar, green peppers, carrots. Delicious!
marinate the chicken for at least 3 hours; add 1 quart of water, 1 tbsp of indian curry, 1 teaspoon of sugar, a few dash of sesame oil, corn starch, salt and pepper to taste, and 1 tsbp of oyster sauce or soy sauce
Curried Shrimp with Lemon Rice
Preparation Time: 15 minutes
Marinade Time: 15 minutes
Cooking Time: 20 minutes
Serves: 4
Ingredients
1 cup chicken stock
1 cup water
1 cup long grain rice
3 Tbsps. lemon juice
2 Tbsps. cilantro or parsley, chopped
2-1/2 Tbsps. cornstarch
1/2 cup cold water
2-1/2 Tbsps. soy sauce
2-1/2 tsps. sugar
1 Tbsp. curry powder
3-1/2 Tbsps. peanut oil
1 lb. medium shrimp, peeled and deveined
1 Tbsp. plus 1 tsp. dry sherry or chicken stock
2 tsps. Oriental sesame oil
1 Japanese or regular eggplant, about 6 oz. each, thinly sliced diagonally
2 cloves garlic, minced
3 scallions, thinly sliced
Instructions
Combine stock and water in a saucepan over medium high heat. Stir in rice and pepper to taste and bring to a boil. Immediately reduce heat to low. Cover and simmer 20 minutes, or until rice is tender and liquid is absorbed. Remove from heat and let sit 5 minutes, covered. Sprinkle lemon juice over rice. Add cilantro and fluff with a fork.
While rice is cooking, dissolve 1-1/2 Tbs. cornstarch in 3 Tbs. cold water in a bowl. Add half the soy sauce, 1 tsp. sugar, curry powder and 4 tsp. peanut oil. Mix thoroughly. Stir in shrimp and toss to coat. Marinate 15 minutes.
Combine remaining cornstarch with remaining cold water in a jar with a tight-fitting lid. Shake vigorously. Add sherry, sesame oil, remaining soy sauce, and remaining sugar. Shake again and set aside. Heat remaining peanut oil in a wok or heavy nonstick skillet over high heat. Stir-fry eggplant 5 minutes or until eggplant is almost tender. Transfer eggplant to paper towels to drain. Discard all but 2 tsp. oil from skillet. Add shrimp and marinade. Add garlic and stir-fry 1 minute over high heat. Return eggplant to skillet and stir-fry 1 minute. Add soy sauce and cornstarch mixture and sauté 1 minute or until sauce begins to thicken. Remove from heat. Stir in scallions. Serve over rice.
