Could someone please give me a recipe for curry?



I have never made a decent curry from scratch. I have to use jars, packets or tins of sauce or buy frozen curries. I’d love the know the secret. People tell me it’s easy but mine have never been good. Please help.

I am in SaudiArabia.. I used to flop when cooking curry, I found this recipe in an American cookbook of all things, but my Saudi mother in law actually loves it.. Theres a story behind this, when a british ship captain went to India once, an indian cook made this for him once, he loved it so, he wanted to eat it often… try it.. its nice..

Country Captain Chicken
1/3 cup flour
1 salt
1/4 teaspoon pepper
3 to 4 pounds chicken parts
4 tablespoons butter
1/2 cup chopped onions
1/2 cup chopped green pepper
2 cloves garlic, minced
2 teaspoons curry powder
1 teaspoon salt
1/2 teaspoon dried leaf thyme
2 cans (14.5 ounces each) stewed tomatoes
1/4 cup chopped cilantro
juice from 1/2 lemon
1 tsp sugar
3 tablespoons raisins

Combine flour, salt, and pepper in a food storage bag. Add chicken and toss to coat all pieces. Melt butter over medium-low in a large skillet; add chicken and cook over medium heat until browned on all sides. Remove chicken; add onion, green pepper, garlic, curry, 1/2 teaspoon salt, and thyme, and cook until tender. Add tomatoes, breaking up.add cilantro, lemon juice and sugar. Simmer, uncovered, 10 minutes. Return chicken to skillet and simmer, covered, over medium-low heat, until chicken is fork tender and juices run clear, about 45 minutes. Add raisins and cook 5 minutes longer. Serve with hot cooked rice.

note: ive substituted whole fish fillets, lamb, and beef for the chicken and its turned out excellent on all.. try ^_^

The secret of making good curry is use a lot of onion for meat curry and a lot of garlic and ginger for fish/sea food curry. I cook my curry without coconut milk. Mix curry powder with a little water to make paste, finely chopped onion (for one medium size chicken) about a cup, fry the onion until soft(not brown) add curry powder, fry until strong aroma (almost brown) add chicken/ meat, cook for a few minutes add cream and chicken stock and cook until the meat done, add salt and lime juice to test. Put some roughly chopped coriander leaves just before turn off heat. Remember, Meat curry powder for meat curry and fish curry powder for fish/sea food curry, it is not the same, you can buy those curry powder from international store.

BASIC CURRIED STEW (‘Westernised’!)
750g boneless beef neck, cubed, or beef ‘curry pieces’
30 ml cooking oil
1 onion, chopped
15 ml curry powder
15 ml turmeric
1 chilli, seeded and coarsely chopped
5 black peppercorns
2 bay leaves
1 apple, cut in wedges
1 tomato, skinned and cubed
3 carrots, sliced 200 ml meat stock
15 ml cake flour Brown meat in heated cooking oil.

Add onion and sauté till transparent. Add curry, turmeric and chilli and fry for 1 minute. Add peppercorns, bay leaves, tomato and heated meat stock. Lower heat, cover with lid and simmer for 1 ½ hours or till meat is tender. Thicken with cake flour and water paste if necessary. Serves 4.
