Chicken curry?
I want to make a Thai chicken curry for my boyfriend. I have a recipe, but it calls for a few things that I am not sure where to get (we don’t have an asian market in my town, unfortunately). I want to know how available a few ingredients are or if there are any acceptable substitutions. Are these available in most large grocery stores with an asian section? They are:
fresh lemongrass
shrimp paste
asian fish sauce
coconut milk & cream (is there a big difference?)

you can buy most of that stuff on line and have it delivered.. they are hard to find in most american grocery stores. just google Thai food on line
Lemongrass – yes, should be. we have it here in Buffalo. Near the ginger. Know what it looks like.
Shrimp paste – maybe. Look in the Asian foods section (duck sauce, soy sauce, etc). You could prob skip it or use a bit of fish sauce in a bottle (same place).
Coconut milk vs cream – See if you need unsweetened or sweetened and read the can. Cream will just be thicker and heavier in fat, thats all. You could thin it out with milk.
My other suggestion is to just get a good curry seasoning mix, instead of all the different spices they require.
Don’t think you’re going to find the fresh lemongrass in the local store. You won’t be able to find the shrimp paste either but the asian fish sauce – I know it by the name of Oyster Sauce – you can find it in your local store. The coconut cream is also in your local store. Don’t recall seeing the coconut milk there. The difference between the two is the consistency. The difference is similar to the difference in consistency between regular evaporated milk and sweetened condensed milk. I prefer working with the coconut cream. It makes a “to die for” coconut cake.
