Easy Chicken Curry (Jamaican)
* 1- 3lbs chicken
* 2 tablespoon curry powder
* onion, thyme, garlic, pepper, black pepper.
* salt to taste
* lemon or lime juice
1. Clean, skin,and cut chicken in small pieces,then wash with lime or lemon juice
2. Drain, season with curry, onion, thyme, garlic, peppers, salt and let marinate for awhile
3. In a skillet pour about 3 tablespoon of oil. Let oil heat but not too hot
4. Add chicken and let cook until done.
5. Serve over white rice
Saute onions and potato squares.
Add chicken portions to that.
(I use IQF chicken portions)
Add fresh garlic, curry powder, cummin, some cinnamon, salt to taste, and ginger if you like it…
Saute the whole lot taking care not to burn it.
If then the chicken is browned, add a little water and simmer.
To stretch it you can add frozen veg mix of choice.
Now mix buttermilk and brown sugar.
(1 Cup of butter milk to three teaspoons of sugar)
Add to simmering pot.
It will thicken by it self.
Add more curry powder in this last stage of simmering if you need to.
Serve hot on rice.
easy, easy real indian curry.
fry onions in a deep pan (one or two)
when cooked, add one/two tins of tinned tomato.
heat to a gentle simmer.
add your curry powder, or: cumin, fennel, dried bay leaf powder (jowan), dried unripe mango powder (amchur), turmeric.
in a separate pan, cook chicken cubes in a little oil until almost cooked.
throw into the tomato mix.
the tomato mix should be all one very thick sauce, or almost mush.
make roti/chapati:
water + wholewheat flour to a dough. knead. roll out a small palmful to just thicker than a penny/cent. place on flat pan on medium heat. turn when spots of opaque appear. should be ever so slightly browned/burnt at serving.
