Yes you can! Try not to use green/red chilli instead substitute with Crushed Black Pepper (good for health) and don’t forget to add curry leaves and few mint leaves. Yummy! Now, you made me hungry!

all curries do not requre ginger. so u can still make a tasty curry as u have many other ingredients at you disposal. and dont forget to add salt and water !!!!

Yes sure you can …instead of chili you can use pepper and tomatoes can be replaced by beaten yogurt ..(it just needs to be cooked properly )

First I will say that mint can really ruin a curry; do not add it unless your recipe calls for it.

Second, some form of red powder or green chili is really ideal in most curries. Black pepper simply won’t produce that zing.

Third, there are millions of curries, and not all of them are tomatoe based. You can experiment with yoghurt, coconut milk as ways to liquify the curry more if you wish. Top add the zing missing without tomatoes, add some vinegar and sugar, kethchup, or apply cider vinegar.

I personally don’t care for fennel and skip it for the most part; it is left out if North India. Instead, consider adding a few cloves and a few dashes of cinnamon powder to simulate the garam masala flavor.

SInce you don’t have ginger, I’d recommend leaving out the garlic too. Neither spice is required and the garlic isn’t going to work as well without the sweetness of the ginger.

Finally, to thicken a curry consider blending sliced almonds with water or adding pureed tellow onions.

The key to a magic curry is to balance the ample amount of salt with just a little bit of sugar because in the west most produce is lacking in the flavor you get in India.
